Fermentation can be used on protein isolates and concentrates to remove unwanted flavors, improve texture and get rid of heat-resistant spores. "There are a broad variety of strains that can be used for fermentation, and many possible plant protein substrates, and they all interact with each other differently," said Herwig Bachmann, expertise group leader for fermentation at NIZO.
