Cold processing can create new proteins, emulsions


Processing proteins at cold temperatures that do not break down lipids could enable creation of new plant-based protein structures, writes Harrison Helmick, a PhD candidate at Purdue University. "This may help ingredient manufacturers create novel fat replacers, emulsifiers, and oil-filled gels that are not possible by any other means of processing," he writes.
