- What pizza is teaching N.C. students about nutrition
Fifteen schools in Mecklenburg County, N.C., are participating in a Field to Fork program in which they will grow fresh ingredients to make their own healthy pizzas. The "Pizza Gardens" project also will be incorporated into classroom lessons. Officials say the program, which has grown locally from five schools in 2010, helps teach students about health and nutrition using something that excites them -- pizza. The Charlotte Observer (N.C.)

- Wash. districts take steps to curb food waste
Students at an elementary school in Washington state say they regularly take items from a cafeteria fruit and vegetable bar and say the selection is healthy and delicious. However, nutrition professionals say a shift to serving healthier meals in schools has resulted in greater costs and more wasted food in some cases. In one district, officials are seeking to curb waste by composting uneaten food, and in another, students are asked to put unwanted fruit and other items on an "extras" table for others to grab. - Health courses could be electives in Calif. district
Officials in Temecula Valley Unified School District in California are considering dropping a requirement that students take health and geography courses. Under the proposal, such courses would be offered as electives to free up additional time for students to take other courses -- a move opposed by some health teachers. "The health teachers' standing on this point is they need this information," said Kurtis Tegman, who teaches health at Great Oak High School. San Diego Union-Tribune
