Cristy Croson, the school district's foodservice supervisor, said the district works to serve students one new menu item each month. - Dietitian sees increasing demand for nutrition professionals
New Jersey registered dietitian Jill Shaffer says there is an increasing need for nutrition professionals who can help guide people toward healthy eating habits. She says more consumers are seeking nutrition help as science links more diseases to diet and the opportunities for dietitians have expanded to include corporate positions, sports nutrition, journalism and wellness. "Adopting good self-care and arriving at a natural healthy weight come from maintaining healthy and reasonable eating practices and engaging in regular physical activity that is enjoyed," she said. - Dietitian's Fodmaps food plan becomes international success
Australian dietitian Sue Shepherd's Fodmaps diet, which she created to help people relieve celiac disease symptoms, has grown into an $8.3 billion market. Shepherd has authored eight cookbooks based on her diet, which avoids food molecules difficult for the body to absorb in the small intestine. Dietitians are using it with clients, and some gastroenterologists recommend it to patients with irritable bowel syndrome. Bloomberg Businessweek

- Nev. principal advocates for safety for students with food allergies
A middle-school principal in Clark County, Nev., has received the Cultural Diversity Foundation's Golden Hand Service Award, in part, for her efforts to protect students with food allergies. Among other things, Paula Naegle helped lead a districtwide effort to establish common guidelines, and at her own school, she revised procedures in lunchrooms, trained staff on food allergies and updated safety procedures.
